Baked Stuffed Potatoes

Still thinking about what to cook for breakfast? Try baked stuffed potatoes!



Ingredients:
2-4 large potatoes (ikut la nak berapa banyak nak)
2 spoonfuls of olive oil
Mixed veggies
Mayonnaise
Salt and pepper to taste
1/2 cup shredded cheddar cheese (guna yang slices pun boleh)
2 spoonfuls of butter

Methods:
  1. Clean the potatoes. Drain. 
  2. Use a fork to poke the potatoes (supaya kentang tak explode dalam oven!) and coat with olive oil. If you want, you can wrap em with aluminium foil, tapi kalau taknak pun takpe.
  3. Bake potatoes for about 40 minutes - 1 hour at 185'C.
  4. While waiting, put the mixed veggies, mayonnaise and salt and pepper in a bowl. Mix well. Put aside.
  5. When the potatoes are done, cut off a slice from the top of each potato (tapi jangan sampai putus).
  6. Fill in the centre with the mixed veggies salad. Top that with cheese and butter and bake again for about 5 minutes or so, and there you go; your very own baked stuffed potatoes!
